This time you get to say hello to Martin, who is not only responsible for the Western Norway region - but also a sommelier and a fabulous baker.
Who are you and what do you work on?
My name is Martin Christensen. I am 41 years young and work as a district manager in Systemkjøp in Western Norway. Mainly Bergen and Haugesund area. I am originally from the flatland on the other side of the water in the south (Denmark), and have now lived in Norway for a good 20 years. Roommate Irene and 2 little girls Eleah aged 4 and Josefine aged 6.
Tell us about your background
I am a Sommelier trained at the Culinary Academy in Oslo in 2009, and have extensive experience in the restaurant industry both domestically and internationally. I have worked in the Bølgen and Moi systems, Choice, and everything from "simpler" concepts to "Fine dining". I have expertise in coaching, training and sales and service for "Front of House" staff.
What do you like to do in your free time?
I am very busy (possibly obsessed) with sourdough baking. A nice hobby, which keeps on giving for years. The best thing I know is the smell of the rye bread ready to be taken out of the oven, or the taste of fresh light country bread crunching in the crust. This is unbeatable. In addition to that, I really like playing music. Then it mainly goes into Guitar and Piano. Singing is limited to the shower.

How would your family describe you in 3 words?
Josefine (6 years old): Kind, smart, pretty

Irene (40 years old): Funny, Curious, determined
What do you see as your strengths in everyday work?
Long experience in the best restaurant industry. I often use my experience, whether it concerns wine, sales, service or maybe I can provide input if a member has operational challenges, in connection with startup. I have a lot of experience in ups and downs, and then it is nice to be able to share these experiences, so the member does not have to "Reinvent the wheel".
Put together your 3-course dream menu:
I may be a bit "old-fashioned" here, but I love good Scandinavian home cooking based on good, healthy and locally sourced ingredients. But if I want to feel a little extra "warm inside", this is a good bet:
1: A good terrine of "anything" local plus seasonal side dishes. Sour bread/rye bread on the side.
2: Lamb shank with the whole Shulamite.
3: Norwegian cheeses for dessert.
Wine: 3 good Italians I think. Preferably from Veneto and Tuscany.
What is your best culinary experience?
There are many, but what they have in common is when the chefs and waiters manage to convey an exciting food and drink experience, where pride for this fantastic profession comes to the fore.
