Bring the cocktail bar home with you!
The Pjolter & Punsj bar in Stavanger is a pure cocktail bar, serving award-winning drinks prepared by award-winning bartenders. The Pjolter & Punsj concept is true to its name, and Nordic inspiration and local ingredients dominate the bar menu. When the nationwide alcohol ban occurred, the bar's livelihood disappeared, but the resourceful entrepreneurs were to launch a drink package "to go", which immediately became a success.
Empty the fridge and lock the door?
Bartender Truls Thomsen says that when the alcohol ban was a fact, it was really just a matter of emptying the refrigerators and throwing away the unique ingredients that, together with quality Nordic spirits, form the basis for Pjolter & Punsj's unique bar menu. But Truls and his team agreed that it would be "too crazy". "Let's put together some drink packages from our stock of ingredients and put them up for sale on our Facebook pages. You never know, right?" As said, so done, and two minutes later the ten packages they had prepared were sold out. "Maybe this is something we should look into a little more?" was the reaction of Truls & Co.
Flexible drink packages
Pjolter & Punsj decided to further develop the drink package concept. Each package contained three different mixers and each mix was enough for five drinks. The customer could add spirits according to both taste and what they happened to have in the cupboard at home. Truls says that the mixers are made so that you can use a lot of different spirits and still prepare a fantastic drink.
When a second batch of 40 packages were advertised for sale on Facebook, they also sold out in a very short time. There was clearly a market for the drink packages, and Pjolter & Punsj has received a tremendous response to the initiative.
A crucial addition to operations
Truls also says that for the past two weeks, Pjolter & Punsj has prepared 120 packages per week, and with a selling price of 300,- per package, this has been a valuable addition in an otherwise zero-turnover period. A bar or restaurant is often the owners' life's work, and for Pjolter & Punsj, the drink packages are an important means of keeping a minimum of operations going and preventing all full-time employees from being laid off. "The success of our drink packages was probably a bit unexpected, but it's nice to know how much our guests appreciate us," says Truls. "It really helps keep our spirits up!"
